Pronounced - cab-er-nay so-vin-yon
Often regarded as the world's premium red
variety primarily due to its ability to grow in a wide variety of climatic
conditions and still retain its varietal characteristics. Grown extensively in
the Médoc, the heart of Bordeaux, and all major winegrowing regions of the world.
Cabernet Sauvignon is often blended with
Cabernet Franc & Merlot.
Young
wines will typically have a purple tinge. Intense red deep and brilliant. Ageing
will see the colour change to the orange red colour of red brick.
Cassis/blackcurrant,
capsicum, mint, eucalyptus, chocolate, blackberry, tobacco, leafy, grassy, cigar
box, herbaceous, stalky/stemmy, mulberry, cherry, plum.
Ageing
and oak treatment will generally see the primary fruit qualities change to
preserved fruits. Tannins are firm and gripping when young and can provide a
strong puckering sensation that diminishes with age to give a fine grain full
mouth feel. Typically Cabernet Sauvignon may have a degree of hollowness in the
middle palate and is blended with Merlot and Cabernet Franc to fill this gap
(the label may not show this blending if they are under 15% of the blend).

Hill" range of Cabernet Sauvignon is award winning and continually displays
velvety tannins and classic Cabernet Sauvignon character. One Hogshead
accidentally escaped bottling of the first release, 2002, and this wine has
therefore spent 3 years in oak. This has now been bottled and released as the
"Lost One". 3 years in oak has transformed this already great wine into a
stunning surprise. The tannins are no longer just velvety but creamy smooth.
This is a strictly limited release and will be sold by the carton only to lovers
of classic Cabernet Sauvignon.
