warm than too cold ruins more wines. It is easier to warm a wine that is too
cold than to cool a wine that is too warm.
Following is a simple guide for the
serving temperatures of wine.
Red wines are served at warmer temperatures, in
general, to reveal the wines characters and to soften or smooth the tannins and
other chemicals that are extracted from the skins of the grape during
fermentation. These tannins and other chemicals can be somewhat harsh on the
palate, your mouth, and at cooler temperatures will only become sharper.

Bodied Robust Reds
White wines release their varietal aromas and
wine bouquet best at cool temperatures. White wines are not usually fermented
with skin contact and therefore they have much less tannins and other skin
chemicals than red wines. The lighter more delicate wines can be appreciated at
lower temperatures than fuller bodied styles or those white wines that have been
barrel aged or fermented.

While the conventions for appreciating
wines are based on some science at the end of the day the best temperature to
